Ryuta Sasaki
After training at an Italian restaurant in Tokyo
At the age of 24, he obtained the JSA Sommelier certification and moved to Italy.
Ristorante Cibus
Trained at Osteria Storica Morelli for a total of two years
Since 2019, he has been training at Osteria Selvagina.
At the 2022 Japan Cheese Awards
Komagome ricotta cheese, which he was in charge of producing himself
won the Gold Award for Best Category.
In the same year, he obtained a Type 1 hunting license.
July 2024: Becomes independent as a traveling chef.
